Easy Fall Soup

One of my favorite fall soups: Italian sausage, kale, and white bean soup

What you need
kale

cannellini beans

chicken broth

garlic

yellow onion

crushed red pepper

pepper

salt

celery

carrot

Instructions
1. Heat 1-2 tbsp olive oil in a pot over medium heat and add 12 oz sliced Italian chicken sausage and cook for ~5 min or until lightly browned. 2. Remove sausage and add 1/2 medium yellow diced onion and cook for ~2-3 min, until translucent. 3. Add 2 diced carrots and 2 sliced celery stalks. Season with salt and pepper and red pepper flakes. 4. Add in 4 minced garlic cloves and cook for ~1 min. 5. Add 6 cups of chicken broth and bring to a boil, then simmer. 6. Add 1 can of rinsed cannellini beans, 1 bunch of de-stemmed and chopped kale, and cooked sausage. 7. Maintain gentle simmer for ~15 min.View original recipe
